March’s edition of Good Food Mag is full of healthy and budget friendly meal ideas – loads of people have been singing its praises on twitter lately and i’m right there with them.
My fave recipe of late is the Butternut squash, spinach and feta filo pie – you can find the recipe on their website. I pretty much stuck to it so I won’t reproduce it here – I added a drizzle of oil to the vegetables and a scattering of dried sage.
Here’s the one I made…
Butternut squash is such a fab veg – healthy, substantial and sweet. It goes brilliantly with the feta and red onion in this recipe.
Filo topped pies are also brilliant if you’re trying to eat a lower fat diet but still want some pastry in your life. It’s also faff free – just scrunch it up, put it onto of your filling, brush some olive oil on then bake, and there you have it – instant pie crust.
The boys weren’t mad for it – I grilled up some fish fingers for them on the side as I knew it was a bit of a gamble. They liked the filo, but the big bits of onion put them off trying the veg part. I always give them the benefit of the doubt though, because you never know when they might surprise you; just not this time.
Disappointing on that front – yes, but it meant there was a tonne of tasty leftovers for Matthew and I for the rest of the week.

Once again you’ve looked into my fridge and come up with the perfect recipe. Butternut squash from the veg box and some feta that needs eating. I’ve just got some spinach and filo pastry so will give this a try. I’m always pleased to find a good vegetarian dish to vary our meaty diet.

Just to add that this was a big hit. Very tasty, filling and the recipe was enough to feed four. We ate half and had the rest as leftovers for lunch the next day. Like most leftovers I think they were even tastier the day after. I would definitely recommend red onions for this one, as I had one red and one white and the white one was a bit strong tasting. I’d also be tempted to fry them a bit first to get a nice caramel flavour going on. Oh and I need a bigger pie dish! Your Le Creuset option in the picture looks perfect.
