Matthew was working at the weekend and Sam went to stay with his Uncle Markie, so that left Arlo and I home alone and fancy free.
It was lovely being able to have some time just the two of us. We played train track and hungry hippos then took Lily out to the park.
Feeding the ducks was a bit on the scary side when we got mobbed by huge ravens so we scurried home with freezing cold fingers and faces ready for a comforting lunch.
I’d been toying with the idea of making a rather devilish-looking recipe i’d seen in my Nigella Bites book for Sarah at Maison Cupcake‘s latest Forever Nigella challenge, “Ciao Italia”. It’s basically an excuse to celebrate the delights of that well-known domestic goddess.
My chosen recipe involves a whole lot of mozzarella cheese oozing out of a fried sandwich – what’s not to love?! Naughty Nigella wins me over at the end of her recipe when she instructs you to “cut in half and apply to face.”
Mozzarella in Carrozza is basically a cross between eggy bread and a cheese toastie. It’s a super-indulgent lunch treat but it’s rapid to make and ultra-filling so perfect for quietening down the enormous appetites of my boys. You can find the full recipe on Nigella’s Website
In Italy it is often served with a tomato sauce, chopped parsley and grated cheese in three stripes across the top to look like the Italian flag.
I opted to serve it with a side of delicious Isle of Wight Tomato Ketchup, some cherry plum tomatoes and a simple sprig of basil.

Mmmm….sort of an Italian croque monsieur. My vegetarian, mozzarella loving, eggy-bread fiend daughter will love these.
