I spotted these gorgeous fellas in this month’s Good Food Magazine and immediately thought they’d be perfect for Sam’s lunchbox and also for post-school munchies.
They’ve got mashed cooked carrot in, along with pineapple chunks and juice and a healthy scattering of sunflower seeds so you can feel quite virtous eating them despite the fact that it’s basically cake. I love the hit of warmth from the cinnamon, making it perfect with a nice cuppa after the bracing school run.
I baked a batch, froze a few for future lunchbox action, then we scoffed the rest. They rock big time with a dollop of Greek Yoghurt for breakfast and I reckon they’d also be cracking with custard…
Good Food Mag is on a health kick and has packed a huge amount of inviting recipes into February’s issue, so if you’re trying to improve your family’s diet then i’d definitely recommend a copy. The mini booklet that comes with it is especially inspiring.
The recipe isn’t on their website yet, so I can’t link to it, but you won’t regret buying this month’s issue… i’m still using it loads for my weekly meal plans.
Sorry i’ve been a bit quiet on the bog posting front since the new year. The firefighter has done his back in so i’m stretched a bit thin when it comes to creating new recipes for the blog… normal service will resume once we’ve got him sorted!!!
