If there’s ever a time for one pot recipes that you can sling in the oven with minimal fuss, then it has to be now. First week back after half term and we’re all trying to adjust back into functioning on a schedule, rather than schlepping around in PJs for the best part of the day (or was that just us?!)
So I thought I’d share some more of the photographs and recipes from the Good Food Channel shoot that I food styled for last month with my good friend Sharron behind the camera… I’ve put links in to the recipes i’ve written so you can go check them out.
The recipes I developed are all very straightforward and ideal for family weeknight meals, yet are equally at home in the centre of a dinner party table for friends.
We cooked these recipes up in gorgeous cookware and presented them on super-cute and cosy knitted matts… and I snuck one of my Granny’s beloved Spode plates in there too…
Drop dead gorgeous stew of tomatoes, courgettes, aubergine and onion bubbling away under the most divine crust of hunks of french bread topped with cheese – the ultimate vegetarian comfort food you can imagine eating after a day’s skiing.
Easy and finger licking good, this one pot recipe combines chunks of butternut squash and red onion, with cherry tomatoes and sausages bathed in a sticky coating of sweet chilli sauce.
A lovely simple recipe for getting your oily fish into the week’s meal plan. Roasted asparagus is truly lovely and combined with the potatoes and salmon is a really satisfying and balanced bit of nosh.
I’m on Easter recipe duty at the moment so will be bringing you a feast of seasonal treats in the coming month to help you prepare for the big weekend ahead…
