If you’re hankering after some summer dessert ideas to take to a party or along to a picnic, then i’ve got a couple of easy recipes for you in association with Flora.
Let’s kick off with these easy peasy Mini Raspberry Cheesecake Pots, with a divine crunchy hob nob biscuit base topped with home-made fresh raspberry sauce and a lemon-spiked creamy halo. There’s a lot of flavour, crunch and creaminess going on with this dessert!

The second sweet is the ideal picnic bake, or one to pop in a jolly tin to take camping. Packed with fruit and oats it’ll give you all a long lasting energy boost. Let’s face it, when you’re sleeping under canvas and walking half a mile to the nearest shower block, you’ll be very thankful you packed these beauties!
We had relatives staying when I was experimenting with this recipe, and I can confirm that the entire batch was demolished in a half-crazed feeding frenzy. Sam still goes misty eyed when he thinks about them… “They’re the best thing you’ve like, EVER made”. I’ll take that compliment and bottle it. They don’t come around often, despite my best efforts.

You may have noticed things have gone a little quiet here on Feeding Boys this summer, and I’m afraid they will continue to be sporadic. I’ve had exciting work projects on the go, a big birthday to celebrate and fun travels to look forward to. My days spent creating in the kitchen have rapidly reduced lately, so apologies if you’re missing the usual level of recipe posts. I’ll be back on form once autumn kicks in!
