So it was packed lunch ideas yesterday, and today i’m bringing you the round-up of super-quick recipes perfect for picnics from August’s round of Speedy Suppers, hosted by myself and the very lovely Sarah at Maison Cupcake.
The weather seems to have warmed up again, so fingers crossed there might still be a bit of time to squeeze in a few more picnics. Being portable, rather handily these recipes would also work well for further lunch box inspiration.
So here are the fabulous Seven Speedy Picnic Recipes from the marvellous bloggers who entered our challenge… scroll down for September’s theme…
First up, Laura from How To Cook Good Food made these divinely presented Japanese Pancakes or Okonomiyaki. They’re a fantastic way to use up leftovers and easily adaptable. Head on over to Laura’s blog for the recipe, and also for a great write-up of some Japanese delights.
Check out these beautiful Mini Picnic Bakes from Michelle at Utterly Scrummy. I adore the way she’s wrapped them up in ribbons of courgette, it just elevates the bakes into something rather classy.
Next in line is this Spiced Roasted Summer Vegetable Salad from Choclette and Chocolate Log Blog, niftily using quick cook Millet for this healthy recipe perfect for munching on out and about.
Then we have Quick and Easy Cajun Red Beans and Rice from The Taste Space. She’s used vegan chorizo which I really need to get hold of as Matthew would adore that i’m sure!
Next in line are these incredible sounding Vegetarian Jerk Spiced Scotch Eggs from Allotment 2 Kitchen – wowzers! You’d think they’d take ages to make, but the genius shortcut of vegetarian sausage meat is the key here. My husband is going to want these in his work packed lunches as soon as he claps eyes on this blog post…
A gorgeous sounding bunch of flavours in these Eggs with Mint and Spinach and from Spicy, Quirky and Serendipitous. Omelettes are such a comforting meal, yet can be on the table in a matter of minutes. Also they’re still delicious served cold, so make ideal picnic food too.
And finally the only sweet recipe entered into Speedy Suppers for August are these Crispy Cake Bites from Family-Friends-Food. Well Nobbly-bobbly spiced chocolate biscoff fruit and nut crispy cake bites, to be more accurate! They were made as a sleepover playdate activity and sound blimmin’ lush to be frank!
