Mother’s Day is nearly upon us. The day when us hard working mums of little people might be treated to a little lie-in and a spot of breakfast in bed. There should also be cake… lots of lovely cake. We’ve earned it ladies.
These classy little numbers marry blueberry flecked sponges with swirls of zesty lemon buttercream. The lovely tangy edge you get from the fruit means they’re not a sickly sweet bake. Make a batch for your own mum and go round for a cuppa to enjoy them together, if you’re lucky enough to live close enough.
Sadly I live a long way from my mum, but I dedicate this recipe to her. She’s been an amazing support listening to me ranting down the phone lately as I’ve been battling with my youngest every morning to go to his new school. It took three people to bundle him through the door of breakfast club yesterday. It felt like he was being taken into police custody against his will. He’s very strong for a 5 year old. So yes I feel like I deserve some cake this weekend, and so does my mum!
