Serve up these tender Lamb and Red Onion Skewers with a Pea, Mint, Feta and Yogurt Dip for a barbecue feast with family and friends
We’ve not lit our barbecue yet this year, in fact I put my thick duvet-like winter coat back on yesterday as the rain and wind threw itself at me as I attempted the school run. But being an optimist, I live in genuine hope that summer will eventually warm the shores of Whitley Bay.
As soon as it does i’ll be taking my glass of chilled rosé straight outside and sparking up the grill to cook some of these meaty skewers. When I was testing out this recipe for the Channel 4 website I took a batch over to my Californian sister-in-law who declared them to be the best thing she’d eaten since she moved to the UK. I’ll happily take that kind of endorsement!
The marinade is a very simple concoction that uses simple store cupboard hero mint sauce, which also gets an outing in the pea and feta dip. I whizzed up the dip in my new Optimum Froothie 9400 which is great for creating silky smooth sauces rapid style.
If you want to get ahead, then why not marinate a batch of lamb and then freeze it ready to cook once the sun decides to make an appearance. That’s what i’ve done 🙂

Lamb on the bbq is the way I love to eat it and that minty dip would be the perfect partner for it. Let’s hope for so much sun over the next few months, I could enjoy this recipe on a regular basis 🙂

Even though I don’t eat meat this sounds lovely to make for an “all-inclusive” barbecue. My FIL would love it!
