These budget-friendly spiced and juicy chicken thighs will help turn up the heat if you’re feeling a bit chilly while braving British BBQ season. The jalapeño corn bread is a ridiculously faff-free side that makes a tasty change from the usual array of bread hastily grabbed from the supermarket when the sun has made an appearance.
We’ve not done a whole lot of barbecuing up here in Whitley Bay yet this “summer”, but when we have sparked up the grill we’ve had to close the lid to stop the gas flames going out because of the fierce wind that blows here! We’ve also not got around to getting much in the way of garden furniture yet, but to be honest even when it looks warm outside I get a chill after about 5 minutes so it’s safer to eat in the kitchen.
I’m sure i’ll toughen up eventually!

As i’ve used thrifty ingredients for this easy barbecue recipe, i’m entering it into Camilla and Helen’s Credit Crunch Munch event, this month hosted by Jen’s Food. If like me you’re really watching the pennies at the moment, hop on over there for some fantastic ideas for making your food go further.
