If you’re looking for a Slimming World lunch idea, I’ve got just the thing – a hearty bowl of Aromatic Carrot Soup packed with plenty of speedy veg, protein rich black beans and a whole lot of flavour. Topped with a generous dollop of creamy Quark and a scattering of fresh herbs, all that’s left to do is scoop it into your mouth with these deliciously crisp Coriander and Sea Salt Dipping Chips.
Sounds indulgent, tastes indulgent, but it’s totally healthy – hurrah! It’s really quick to make this recipe at the weekend, and then you’ve got four lunches up your sleeve without much effort at all.
I love a Slimming World Lunch idea
I really struggle to come up with lots of different lunch ideas, so a batch of tasty soup is a brilliant way to keep me on plan. What else do I have for lunches? Apart from soup these are the kind of meals I’m tucking into at the moment:
- Jacket potatoes with last night’s leftovers or egg & ham salad
- Pimped up noodles – Mug Shotz with added prawns, kale, peas, peppers and soy sauce
- Omelette and salad
- Crustless Quiche – with loads of salad
- All Day Breakfast – Eggs, Bacon, Mushrooms, Beans, Tomatoes

Speedy Carrots
Why are carrots so good? Well they’re a Speed Food on Slimming World, which basically means they’re low in energy density and have extra slimming power! When you’re on the Slimming World Plan you need to try and fill a third of your plate with Speed Foods at every meal. So the fact that most of this soup is made out of carrots is a total winner for weight loss!
I grated my carrots in my new Magimix Food Processor – soooooo quick! Honestly this gadget is cutting some serious prep corners for me at the moment – I’m LOVING it!
Dipping Chips
What do you like to eat with your soup? Anyone who knows me will testify to the fact that I’m a total crisp fiend, and I find it hard to imagine not having a bag with a bowl of soup. Old habits die hard. Sooo as a little solution to this I thought I’d make my own healthier spin on some Dipping Chips. I took a Weight Watchers White Wrap, which counts as a Healthy Extra B Choice on the Slimming World plan, snipped it into Dorito shaped triangles with a pair of scissors, sprayed them with frylight and sprinkled them with ground coriander and sea salt and baked them in the oven. OMG they’re delish and sturdy enough to get a good scoop of soup and creamy quark on.
I reckon it looks so un-diet like that you’d easily get away with serving this soup for friends and family as a starter or light lunch. That really is the beauty of following the Slimming World plan, it’s so tasty that everyone will want to eat it!
A Slimming World lunch idea, this thick and tasty soup is packed with carrots and aromatic lemongrass, garlic and fresh coriander.
- 1 leek chopped
- 2 cloves garlic crushed
- 2 tsp lemongrass paste
- 5 medium carrots grated
- 1 handful coriander leaves picked and chopped
- 500 ml vegetable stock
- 1 400g tin black beans drained and rinsed
- Quark to serve
- 2 weight watchers white wraps
- frylight
- ground coriander
- sea salt

Spray a large saucepan with frylight, heat over a medium heat and then pop the leeks, garlic and lemongrass paste in and gently fry with a generous pinch of sea salt for a few minutes until the leeks soften.

Add the grated carrots and chopped coriander and stir to combine and cook gently for a few more minutes. Add the vegetable stock, pop the lid on and allow to simmer for 15 minutes.

Remove from the heat and then blitz in the blender in batches until smooth. Stir in the black beans and reheat the soup when ready to serve.

Divide between four bowls and spoon a little quark on the top and a scattering of freshly chopped mint or coriander.

Pre-heat the oven to 200C/180C fan/gas 6.

Cut the wraps into triangles, lay out on a baking sheet and spray with frylight, turning over and spraying again. Then sprinkle the chips with a dusting of coriander and sea salt.

Bake on the top shelf of the oven for around 5 minutes until crisp. Be careful as they easily burn! Serve in little bowls for people to dip in their soup.

This looks gorgeous Katie. Soup is just one of the best things at this time of year. Blitzing the soup then adding beans is a lovely idea. I used to make a carrot and butter bean soup, where I blitzed half the soup so had some butter beans and some bits of carrot. I’m not sure why I’ve got out of the habit of making it – was delicious.
