A decent family-friendly chicken traybake is the stuff of dreams on a busy weeknight, especially when it’s Slimming World friendly. Chicken thighs are so lovely and juicy, so when they’re roasted together with the veg and sticky glaze, you end up with a glorious tangy sauce in the bottom of the dish.
Easy to make?
It’s really just a matter of a bit of veg prep, or even just buying the veg in those pre-prepared bags from the supermarket if you’re really strapped for time. It’s then a just a case of bunging the ingredients into a big bowl, tossing them together and then turning them out into a massive roasting dish and shoving it in the oven. Marvellous.
In terms of the glaze, I’ve put together some lush flavours without maxing out on the calories. Zesty lime juice, a light chilli sauce (I used Blue Dragon), some crushed garlic, chopped coriander and my favourite ingredients of the moment – lemongrass paste. Barts do a little jar, as do Sainsbury’s. I put it in that lush Aromatic Carrot Soup I made last week.
Spice it up!
Use the biggest roasting dish you can find so you can spread the ingredients out as much as possible, that way they’ll cook nice and evenly. I sprayed it with some frylight before it went in the oven, just to make sure it all got that lovely golden roasted glow.
If you like things spicy, you could easily add some chopped fresh chillies in with the veg, but as the kids were eating this I thought the sweet chilli sauce was about the right level of heat for their tastes. They like the flavours of curries and chillies, but can’t take the heat just yet.
How many Syns?
At the time of writing this there is 1 Syn per tablespoon of Blue Dragon Light Sweet Chilli Sauce, but please double check the Syn content of whatever sweet chilli sauce you decide to use on the Slimming World website just to be sure! I’d hate to be repsonsible for getting your Syns wrong. I’m certainly not an official Slimming World recipe developer (although I’d love that gig!), I just do my best to follow their eating plan as best I can and come up with tasty meal ideas.
A Slimming World Friendly one pot family meal of juicy chicken thighs roasted with butternut squash, baby new potatoes and peppers with a sweet chilli, lime, garlic and lemongrass glaze
- 600 g chicken thigh fillets no skin
- 250 g baby new potatoes
- 250 g butternut squash peeled and cubed
- 1 red pepper chopped into large chunks
- 1 lime zest and juice
- 2 cloves garlic crushed
- 2 tsp lemongrass paste
- 3 tbsp light sweet chilli sauce
- 1 small bunch of coriander leaves picked and chopped

Pre-heat the oven to gas 7, 220C, 200C fan. Pop the chicken thighs, potatoes, butternut squash and red pepper into a bowl. Season with salt and pepper and then add the remaining ingredients and toss together until coated.

Turn out into a large roasting dish and give it all a good spray with frylight. Bake in the oven for around 50 minutes until the chicken is golden and the vegetables are cooked through.

Serve with lashings of green salad.

This looks fabulous. My family are real carnivores (I’m not!) and they also love roasted veg, so they’d definitely go for this. I might substitute some salmon for myself, or just stick to the veg!
