Welcome back to another edition of Speedy Suppers and a huge thanks to Sarah over at Maison Cupcake for hosting the April round.
Busy family cooks need a repertoire of speedy suppers up their sleeves, so Sarah and I came up with this blogging event challenging folks to share their latest 30 minute (or less!) rapid meal ideas so we can all be inspired and cheer up our weekly meal plans.
It feels like April zipped by in a flash, but thankfully lots of you had time to join in and share your fabulously speedy supper ideas with us, so get ready for a rapid fire round of recipes…
I was first out of the blocks with one of my favourite express meals.
These Bacon and Egg Puff Tarts use shop bought ready rolled pastry – oh yes, they are a marvel. I spread them with a creamy pesto layer and topped them with comforting bacon and eggs.
Next up Nazima joined us from Franglais Kitchen with her Pan Fried Chilli Crab Udon Noodles
A 5:2 diet friendly dish full of all the Asian flavours I adore, so this is definitely going on my meal planner. We’re all quite partial to a stir fry in our house, but i’ve never tried crab with the boys before.
Nazima was clearly in a fast food mood (of the healthy variety of course) in April, as along came another rapid fire dish in the shape of her Wild Garlic Pesto with Walnut and Truffle Oil.
What a sophisticated array of flavours and a wonderfully simple sauce to stir into your pasta on a weeknight when you’ve just got in from work and have zero time to do anything ambitious in the kitchen.
Next to join our express recipe party is my French friend Helene from Croque Maman who’s swiftly put together this 5 Minute Prawn Curry.
Helene is the mum to twin toddler boys so is the mistress of doing things quickly! She’s used creme fraiche in this quick sauce which is one of my absolute favourite ingredients – so smooth and creamy.
Cheryl’s healthy looking Sausage, Veg and Bean Hotpot over at Madhouse Family Reviews looks like a brilliantly family friendly supper.
Here it is before it went in the oven and you can see Cheryl has packed it out with vegetables and beans to give her family a wonderfully nutritious meal.
Lovely Laura over at How To Cook Good Food has whizzed in to share her Spring Vegetable Broth.
All the greens came from her allotment and I think it just looks like spring in a blow. The home made croutons and grated cheese just make it all the more inviting.
And finally my fellow host Sarah has zoomed in with her egg-tastic Spinach Tortilla and 10 ways to spice it up.
I love how this recipe is so versatile that you can easily use up what you’ve got in the fridge and cupboards to customise it to your family’s tastes.

Short cuts and cook ahead elements are actively encouraged i.e. using sauces, frozen food, left over bits and pieces as a component. So long as assembling/the bit where you actually cook it takes under 30 minutes that’s fine. Add the URL of your post to the linky below. This a blog hop so feel free to add the code to your own post so your readers can admire the entries received so far.

Please be mindful of copyright, we don’t mind if you’ve adapted something from elsewhere or you made it from scratch. But if you submit something found online or in a book, just tell us where you found it.
One picture from each post submitted will be used in the round up, these pictures may also be shared on social media to spread the word about this event i.e. Pinterest, Google Plus etc etc. If you object to pictures submitted being shared elsewhere then please drop me an email.
