This is a super speedy salad that was put together on a very muggy hot day at the weekend. Apologies for the lack of food and prop styling, but this was not a planned recipe, more a spur of the moment iPhone snap. Nevertheless as it tasted so fine I wanted to share it.
I find feta cheese one of the most refreshing things to eat when you’re wilting in the heat. It takes me away from the sweaty capital and reminds me instead of more preferable balmy evenings in Greece.
It’s pretty mellow and milky with a tangy salty edge, so ideal matched with punchy flavours. In this case sun blush tomatoes but there are a lot of possibilities out there for pairing it with mega fresh things like watermelon or mango. Do you have a favourite?
I simply chopped and assembled my salad veg, finishing off with a scattering of chilli coated seeds and a drizzle of balsamic vinegar.
Lots of crunch and flavour going on… perfect for a lunchtime salad fix when it’s too hot to faff about in the kitchen.
Feta and sunblush tomato salad
Serves 1
Prep time: 5 minutes
INGREDIENTS
Salad leaves – I used beetroot greens and baby spinach
Red and Orange Peppers, sliced
Cucumber, sliced
Chives, snipped
Small handful of feta cubes
1 tbsp sunblush tomatoes
Chilli coated seeds (in a pot from Tesco)
Balsamic vinegar
METHOD
To make it prepare your salad vegetables and arrange in a bowl, then scatter with feta cubes, sun blush tomatoes, chilli seeds and a little balsamic vinegar.
