First of all – Happy New Year everyone! I’m SO sorry it’s taken me so long to post my first recipe of 2015. Feeding Boys still looks like it’s Christmas, when all everyone wants to do is cut back on the calories… ooooops!
Well there is a good explanation for this. We’re in the middle of relocating from London to the North East – yes huge changes and adventures ahead for me and the family. We’re swapping busy urban life for a more chilled out existence by the sea. It’s where my husband grew up and has always had a special place in my heart too. Northumberland is such a stunning and unspoilt region.
This will be one of the many beaches i’ll be walking Pixie and Pickle on very soon…
So it’s been all systems go getting our house on the market, looking for a new place up north and finding school places for the kids. It’s hard to concentrate on anything, but i’ve had recipe work on the go in the background so I thought i’d take a breather and share a recipe with you that’s perfect for January.
Sweet Potato and Chickpea Tagine
This vegetarian tagine makes for a warming and satisfying supper and is packed with good stuff and a ridiculous amount of flavour. My obsession with sweet potato continues and i’ve paired it with chunky chickpeas for maximum tummy filling power. The subtle and fruity Moroccan flavours make it an uplifting meal that’ll make your January a little more joyous (hopefully!).
Make a batch and freeze in portions for those nights when you’re too busy to cook or to take to work to heat up for a filling lunch. I made mine in the slow cooker which worked brilliantly.
