It’s time for a fresh batch of meal ideas for the week ahead, and a little catch-up of what’s been going in the Feeding Boys household in the last week.
I’ve given the blackboard a new lick of paint this week, as its weekly scrubbing had taken its toll on the poor thing! I just ordered a little pot of paint from Amazon – it was only a fiver and I barely used any to get it looking as good as new.
New recipes
I’m developing a few new recipes this week, based on things that I just really fancy eating! I love a one-pot dinner, so a traybake seems like the perfect meal to put together. I’m going to use juicy chicken thighs, baby potatoes, peppers and butternut squash and roast it with a sticky and tangy marinade of lime, coriander, garlic and maple syrup. Watch this space for the recipe!
Now I’ve got a food processor, I’m also up for making falafel, one of our fave veggie staples. I’m going to serve them up in salad and rice bowls for a hearty burst of nutrition. Again, the recipe will be on here soon.
There’s nothing I love more than a pie, but obviously following the Slimming World eating plan has meant I’ve stayed away from pastry products! However, I’m going to come up with a filo topped steak and mushroom pie at the weekend, and see how low in Syns I can get it down to. I’ll share the results next week.
Slimming World Update
I had some lush Slimming World meals last week. The Cauliflower based pizza was actually pretty tasty (even if it did make my kitchen smell like an old lady’s house), the steak with smoky sauce was all kinds of crazy good, and the Peri Peri chicken and chips was a total marvel. But I have to say the good old bolognese that I made for the Pasticcio, was totally knock-out gorgeous, especially as leftovers the next day with a massive salad and a bowl of those spiced dipping chips that I made out of Weight Watchers wraps to go with the carrot soup.
After my massive 5.5lbs weight loss last week, I was feeling on top of the world and super motivated to lose even more at the weekend. But hey, guess what? I gained a flipping pound. What’s THAT about?! I was super SUPER good all week!
It just goes to show that this is a long term journey not a short term thing, and my body is going to lose weight when it wants to! I’m not losing faith though as I’m getting so close to target now and really feeling the benefits.
All I can do is keep going as I have been and hope that the scales might be a bit kinder to me next time!
Northumberland Coast Mighty Hike
I’ve set myself a bit of a fitness challenge for 2018 to keep my weight loss going in the right direction. Matthew and I have signed up to hike 26 miles in July for charity. We’ll be walking from Alnwick Castle to Bamburgh for Macmillan Cancer Support because we know what a difference the dedicated charities and medical teams make to the lives of families who suddenly find themselves in this harrowing situation. Our god daughter has been battling with Leukaemia in recent months, so it’s a cause very close to our hearts.

Sam’s Cooking Challenge
We loved the Pork and Porcini Pasta that Sam knocked up for us last week. Really bold and tasty flavours, and one of those fork suppers you just wolf down very easily. The mushrooms were dried, so Sam didn’t mind eating them as you couldn’t seem them at all. Arlo, however stubbornly insisted on Pesto with his pasta. It was pretty Slimming World friendly too, especially as we used Fry Light instead of a big glug of oil, and I just Syned the Parmesan.
This week Sam’s opted for Baked Saffron Rice, which seems like a lovely soothing winter warmer. Hopefully he’ll be feeling well enough to cook as he’s got this horrible lurgy that’s doing the rounds.
